Throw everything into a slow cooker and dinner is ready to go in about 6 to 8 hours.
Ingredients
1 can of jackfruit (drained, rinsed and pulled apart with your hands)
1 large onion, chopped
¼ cup of red wine vinegar
6 cups of vegetable broth
3 medium carrots, sliced
4 Yukon gold potatoes, diced
1 cup of peas
2 tablespoons of tomato paste
5 cloves of garlic, minced
1 teaspoon of thyme
1 teaspoon of dried parsley (plus more to sprinkle on top before serving)
½ teaspoon of rosemary
1 teaspoon of thyme
Salt and pepper to taste
Preparation
Chop veggies and add all the ingredients to a slow cooker. Cook for 6-8 hours of low.
