Slow Cooker Stew

Throw everything into a slow cooker and dinner is ready to go in about 6 to 8 hours.

Ingredients

  • 1 can of jackfruit (drained, rinsed and pulled apart with your hands)

  • 1 large onion, chopped

  • ¼ cup of red wine vinegar

  • 6 cups of vegetable broth

  • 3 medium carrots, sliced

  • 4 Yukon gold potatoes, diced

  • 1 cup of peas

  • 2 tablespoons of tomato paste

  • 5 cloves of garlic, minced

  • 1 teaspoon of thyme

  • 1 teaspoon of dried parsley (plus more to sprinkle on top before serving)

  • ½ teaspoon of rosemary

  • 1 teaspoon of thyme

  • Salt and pepper to taste

Preparation

Chop veggies and add all the ingredients to a slow cooker. Cook for 6-8 hours of low.
