This recipe might just be my new favorite way to enjoy oats. It is so easy to make and tastes amazing. Feel free to warm up in the microwave or stovetop or eat chilled right from the fridge.

Servings: 4 - Estimated Total Time: 5 mins. (+ time to chill)
Ingredients:
2 cups of rolled oats
2 tablespoons chia seeds
2 1/2 cups of refrigerated coconut milk
4 tablespoons of maple syrup or agave
2 teaspoons of vanilla extract
1/3 cup of sweetened shredded coconut
Dash of sea salt
Directions:
Add all the ingredients, minus the coconut flakes, to a large mixing bowl and mix really well. Divide into 4 containers or mason jars and let chill in the fridge for at least 3 hours or overnight. Add shredded coconut, mix well and enjoy.
