The Almond Butter Lime Dressing is definitely the star of the show with this recipe. So much flavor!
Ingredients
1 ½ cups of quinoa
3 cups of water
Pinch of salt
½ head of red cabbage
1 large cucumber
1 large bell peppers
1 bunch of green onions
Fresh Cilantro
Almond-Butter Lime Dressing:
⅓ cup of almond butter
3 tablespoons of lime juice
1 tablespoon of soy sauce
3 tablespoons of water
1-2 cloves of garlic, minced
1 ½ teaspoons of grated fresh ginger
Preparation
Rinse quinoa. Combine the rinsed quinoa and water in a saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat a bit to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 10 to 20 minutes. Chop veggies. Add dressing ingredients to a blender or food processor and blend until smooth. Assemble bowls by scooping quinoa into a bowl and topping with veggies, Almond Butter Lime Dressing, sesame seeds, and cilantro.
