Spicy Miso Peanut Soba Noodles

If you like a little spice in your life, this recipe is for you. If you are sensitive to spicy foods, you may want to reduce the garlic chili paste or omit it altogether.

Ingredients

Sauce:



  • 3 tablespoons of white miso paste

  • 3 tablespoons of natural peanut butter

  • 1 ½ tablespoons of garlic chili paste

  • 3 tablespoons of soy sauce

  • 3 tablespoons of maple syrup or agave

  • 1 1/2 tablespoons of rice vinegar

  • 1-2 cloves of garlic (minced)

  • 4 tablespoons of water (or use leftover noodle water)



Remaining Ingredients:



  • 1 package of soba noodles (9.5 oz)

  • 8 oz mushrooms

  • 1 bunch of broccoli

  • 1 package of extra firm tofu

  • Sprinkle of corn starch

  • Sprinkle of salt, pepper, garlic powder

Preparation

Press and drain tofu then tear into 1 inch pieces. Sprinkle tofu with cornstarch, salt, pepper and garlic powder then add to the air fryer at 400 degrees for 10-12 minutes (or bake at 425 degrees for 12-14 minutes). Chop veggies and add to a large skillet with 1-2 tablespoons of water and cook for 5-6 minutes or until broccoli starts to become tender and a darker shade of green. Cook noodles according to the package. Add all the sauce ingredients to a blender and blend until smooth. Once veggies are done cooking, add noodles, sauce, and tofu. Cook everything together on low/medium heat for 2-3 minutes. Enjoy!
