Cauliflower Purple Cabbage Tacos

Ingredients

Ingredients:



  • 1 head of cauliflower

  • ¼ cup of veggie broth

  • 1 teaspoon of chili powder

  • 1 teaspoon of smoked paprika

  • 1 teaspoon of cumin

  • 1 teaspoon of garlic powder

  • 1 teaspoon of onion powder

  • 1 teaspoon of salt

  • ½ teaspoon of pepper



Cilantro Lime Slaw:



  • 3 cups of shredded purple cabbage

  • ¼ cup of thinly sliced onion

  • ½ cup of chopped cilantro

  • Juice of 1 lime

  • ¼ cup of vegan yogurt

  • ½ teaspoon of salt



Others:



  • Corn tortillas

  • Black beans

  • Guacamole

  • Cilantro

  • Hot sauce

Preparation

Preheat the oven to 400 degrees F. Chop cauliflower into small florets. Add to a bowl and toss with veggie broth. Add all seasoning to a small bowl, mix then add to cauliflower and toss to evenly coat. Add to a baking sheet lined with parchment paper and roast for 20-25 minutes or until they start to brown on top.



While the cauliflower is roasting, add all ingredients for the slaw to a large mixing bowl. Toss to combine.



Warm tortillas. I usually add a small stack of tortillas to a paper towel, fold the paper towel around them and microwave for 30-60 seconds. Make tacos by adding roasted cauliflower, cilantro lime slaw, black beans, guacamole, hot sauce and cilantro to each corn tortilla.
