BBQ Jackfruit Chili

Rich in fiber and full of flavor, this BBQ Jackfruit Chili tastes wonderful and is easy to prepare. The chili can be eaten plain or piled on top of a seasoned baked potato. I like to also top mine with avocado and nutritional yeast.

Ingredients

  • 1 can of jackfruit

  • 1 can of fire roasted tomatoes

  • 1 can of diced tomatoes

  • 1 can of chili beans

  • 1 can of black beans (drained and rinsed)

  • 1 green bell pepper

  • 1 jalapeño

  • ½ a yellow onion

  • ½ cup of BBQ sauce

  • 1 teaspoon of smoked paprika

  • 1 teaspoon of chili powder

  • 1 teaspoon of cumin

  • 1 teaspoon of sea salt

  • ½ teaspoon of garlic powder

  • ½ teaspoon of southwest chipotle seasoning

  • ¼ teaspoon of onion powder

Preparation

Chop bell pepper, onion, jalapeno and pull apart jackfruit with your hands. Add all the ingredients to a large saucepan. Bring to a boil, then reduce to a simmer and let cook for 45-50 minutes. Simple as that!
