I have always been a nacho lover. When I went vegan I was worried that I’d be missing out. Not only are these nachos free of meat and dairy, they also do not contain oil (minus the tortilla chips). This healthier take on nachos will leave your tastebuds singing!
Ingredients
1 bag of tortilla chips
1 can (drained and rinsed) or 2 cups of cooked black beans (seasoned with salt, pepper, and cumin)
1 large tomato, diced
Cilantro
Jalapeno
Preparation
After following directions for the queso, tofu taco meat, and guacamole recipes, assemble nachos by layering on each topping.
